Onboarding & Arrival: Your First Steps

During the first few days, students learn about the general functions of a restaurant or bar. The intern is introduced to the team, learns about health and safety rules as well as internal procedures (taking orders, setting up tables, cashing, etc.).

At this stage, the training supervisor or internship coordinator has an essential role: he guides the student, entrusts him with progressive tasks and helps him to adapt to the sometimes intense rhythm of the service. The student can also attend the team briefings prior to performances, or refer to daily menus, reservations and special mailings.

Bar Internship Responsibilities

Because students are concerned with the bar, the missions are varied and demanding in terms of precision and creativity. It is first of all to master the art of serving drinks: coffee, wines, cocktails, softs, etc.

Beyond the technical, he must also develop his sense of welcome. The bartender is available in direct contact with customers: he launches orders, engages the conversation and ensures that everyone has a good time. In some establishments, especially theme bars or hotel bars, the atmosphere is essential: smiles, neat presentation and good humor are essential.

The trainee can also be responsible for setting up the bar at the beginning of the day: cleaning, cutting trimmings, preparing glasses, refilling drinks, etc. At the end of the service, participate in the range and net cost of the workstation.

Restaurant Service Skills

On the restaurant side, the student learns the basics of in-room service. Depending on the days and the level of affluence, he can participate in setting up tables (topping, cutlery, decoration), welcoming customers, taking orders and serving dishes.

Great attention is paid to presentation and behavior: the student should adopt a professional posture, express himself clearly, and be courteous in all circumstances. In-room service also requires good memory and the ability to work under pressure, especially during peak hours.

They may also be required to use the electronic ordering terminal, manage reservations, or cash customers at the end of meals. All these missions allow the students to understand the importance of coordination between kitchen and restaurant, and measure the impact of a fluid service and ensure customer satisfaction, schedule, work with equipment, manage pressure and be professional. 

Adaptability & Multi-tasking

The most rewarding aspects of the bar and restaurant scene are versatility. It is not uncommon for  a student to switch between positions during the same day: helping in the kitchen for some simple preparations, helping out at the bar during a peak of activity, or take care of cleaning and room organization during off-peak periods.

This diversity of tasks promotes global learning about the operation of a restaurant. The student develops also has an ability to adapt, a physical endurance and a team spirit.

Building Customer Relationships

When it comes to serving a coffee on the terrace or presenting a gourmet dish, the student is in constant interaction with his clients. This allows him to perfect his relational skills, to learn to anticipate rushes, to respond to specific requests, even to defuse possible dissatisfactions.

This human dimension is often cited as one of the great pleasures of the job. Satisfied customer, sincere thanks or compliments on the quality of service are also motivating rewards for an engaged intern.
